Chicken Pie



I like making my own puff pastry but there are times I feel lazy and have a craving for chicken pies. I always have readymade puff pastry in my freezer for emergencies like this. I bought this 10 pcs Pampas puff pastry from Phoon Huat. All I have to do is cook the potatoes filling and my Chicken pies will be ready in no time. I made a roux to bind the ingredients together instead of using canned soup.

Chicken Pie

Ingredients for filling:

4 potatoes , steam and cubed
50 gms mixed vegetables
100 gms chicken, cubed
1 onion , cubed
1 tbsp butter
2 tbsp flour
200 ml chicken stock
1/2 tsp black pepper , 1/2 tsp salt

Method:

Heat up pan and add in butter. Add in onions and fry till soft.
Add in chicken cubes to fry till cooked.
Push aside and add in the 1 tbsp of flour.
Fry till brown and pour in the 200ml chicken stock.
Mix till flour is dissolved and mixture thickens.
Add in the potatoes and mixed vegetables.
Stir to combined. Add salt and black pepper to taste.
Mix well, if mixture is dry add in water or stock to desired thickness.
Dish up onto a plate to cool.

Cut puff pastry into circles and line the moulds.
Use a fork to prick holes on the bottom of the pastry.
Spoon filling 3/4 full.
Brush the second piece with egg wash at the edge of the circle and cover on top. Make 2 cuts on top of the puff pastry.
Brush with egg wash and bake at 175° for 25 -30 mins or until golden brown.
