Sa Ji Ma ( updated recipe)
(A) 150 gms flour
1/2 tsp baking powder.
1/4 tsp salt
(B) 80 gms sugar
80 gms maltose
Sift flour with baking powder and salt.
Beat eggs into a bowl and beat lightly.
Add in the 2 beaten eggs to the flour.
Knead into a dough.
Leave aside for 20 mins.
After 20 mins, roll dough into a thin rectangle.
Cut into 1 inch sections and finally into 1/2 cm strips and coat with flour to prevent from sticking together.
Heat up oil and fry dough strips till golden brown over medium fire.
Placed fried strips into a large bowl.
Cook (B) over medium fire until sugar dissolves.
Pour mixture onto dissolved sugar syrup and toss until combined.
Transfer mixture into a 6 inch baking tin, lined with a piece of greaseproof paper and press mixture using a spoon until compact.
Leave for an hour or two before cutting into squares.
