Pheonix Tail Prawns

When i was young, we only get to eat prawns during festivals and Chinese New Year.One popular prawn dish is Deep fried batter prawns or known by a fancier name, Pheonix Tail Prawns. Prawns are dipped in a batter and deep fried till crispy and served with chilli sauce or mayonnaise.

Pheonix Tail Prawns

Ingredients: 500gms prawns (shelled and marinade with 1|2 tsp salt and 1|2 tsp pepper for 1|2 ~ 1 hour)
                       100 gms flour (for coating the prawns)

Batter: 1 cup self raising flour
             1|2 tsp salt
             1 tsp cooking oil
             1 cup of cold water

Method: Sift self raising flour into a bowl. Makes a well in the centre.
               Add salt, oil and the cold water in the well. Mix and stir till combine.
               Add more water if necessary to mix to a smooth batter.
               Chilled in fridge for later use.
              Heat up oil in a pan, coat each prawn with flour and dip in batter.
              Slowly drop into the oil and fry till golden brown.
              Remove and place on paper towels.
              Serve with chilli sauce or mayonnaise.
