Soya Sauce Sweet and Sour Pork

This dish has been in my family for 3 generations. My grandmother taught it to my mom and my mom taught it to me. This is not the normal Sweet and Sour Pork using tomato ketchup. Calamansi limes are used for the sourness in this recipe. My mom used to cook this dish every year without fail during CNY but we can have this dish everyday these days.

Soya Sauce Sweet and Sour Pork

200 gms pork loin( cut thinly into squares)
1 tsp soya sauce
1/4 tsp salt
1/4 tsp pepper

1 cucumber(cut away the centre and thinly sliced)
1 red chilli (sliced)
5 calamansi limes ( squeeze for juice)
 1 and a half tbsp sugar

Method: Marinade the cucumbers with the lime juice and sugar together with the chillies. Leave aside for an hour.
Marinade the pork with the 1/4 tsp salt and soya sauce and leave aside for 1/2 an hour. Transfer the pork into the batter and fry piece by piece.
Pour out the limes juice and add 2 tbsp soya sauce and 1/4 tsp dark soya sauce to 200ml water, stir well and pour into a wok to cook till it boils. Then add in the tapioca flour solution ( 2 tsps tapioca to mix with 1 tsp water)
Let it boil till it thickens and if not sweet add sugar and salt to taste.
Arrange pickled cucumbers on a plate, top with the fried pork and pour the sauce over the pork.

 Flour batter for the pork

200 gms plain flour
1 egg
100ml water
1/4 tsp salt
1 tsp cooking oil
Method: Mix ingredients together into a batter and leave aside for 1/2 an hour.
